Every ingredient carries the memory of the soil it grew in. Our mission is not to invent, but to listen. We source directly from indigenous farmers across the continent, utilizing ancestral preservation techniques—smoking, fermenting, and curing—that have survived for centuries.

There are no gas lines in our kitchen. We cook exclusively over open flames, using specific woods—acacia, baobab, and wild olive—to impart distinct, regional smoke profiles into every dish. It is primal, unpredictable, and perfectly precise.
